Shaved Fennel, Apple, Red Onion Slaw with Verjus Recipe... of the Pomaceous Fruit Family~

Apples, Pears, and Quinces all belong to the pome family as they contain a seed core with small pits. All three also belong to the Rose family, Rosaceae -originally indigenous to the Black and Caspian Sea areas.

These fruits are packed with vital elements in and under the skin which is why it’s essential to eat only those from farms not using insecticides or pesticides. You’ve heard the old adage ~ “An apple a day keeps the doctor away.” There is more to this delicious fruit than you realize! Apples are packed with provitamins A,B,C many trace elements, tanins and pectins. Pectin acts against gastro intestinal illness, absorbs carcinogenic substances and eliminates cholesterol. Pears contains several B Vitamins, stimulates growth and improves the nervous system. Quinces spread mostly to the middle east and mediterranean - in hot climates the soft skinned fruits are bitten into but generally quinces are hard skinned and can only be eaten cooked. They are generally used in all kinds of ways - as fragrances and flavorings, liquers and wine - but due to their high pectin content are ideal for jams, jellies, puree and compote.

1/4 Small Red Onion
1 Red Delicious Apple
1 bu. Fresh Basil (1.2 t dried basil)
2 T Verjus

Easy Preparation:

Using a mandolin or a food processor with the slicing blade (thin),or an old fashioned knife ;) slice all ingredients paper thin. Drizzle with a few tablespoons of verjus and toss with 4-5 leaves of fresh basil, hand torn into bite sized pieces. Toss gently and enjoy!
