Select Blend

Some years, when justified, we like to offer a Select oil, to showcase a particularly wonderful or  unusual oil.  This years' Select oil is a dry-farmed single varietal Mission Olive Oil, a balance of green and black notes, smooth and luscious, yet still retaining a slow developing peppery bite.  But the best thing about this oil is its distinctive blueberry note, a rare quality we just had to show off.   It isn't unheard of for olives to express fruit flavors, but it is difficult to capture, as many producers store olive oil in huge containers and these subtle flavors are lost.  Because we often crush small lots and store them in drums, instead of big tanks, we are able to preserve these rare notes and unusual oils.  Great with salads, for dipping, and as a finishing oil.  Not recommended for cooking, as you'll lose the subtle notes.
