Zhug Spice Blend

Traditionally used as a condiment with falafel, Zhug is excellent on the American equivalent, hamburgers, or slathered on any grilled meat, vegetable, grilled or roasted potatoes, in hummus, sandwiches, tacos, burritos, or as a garnish for soups.


·       4 cups cilantro leaves, sans bigger stems, washed

·       ½ - ¾ cup Stonehouse House Blend

·       1-3 tsp Zhug Spice Blend

·       1 tsp Turmeric

·       1 or 2 cloves of garlic

Peel, crush and steep garlic in a squeeze of lemon, lime or mild vinegar to soften the bite. Wash and pick cilantro while the garlic mellows, then place all ingredients—initially only ½ cup of oil—in a blender and pulse into a paste, incorporating more oil to desired consistency.  It should be like pesto. That's it! 


Zhug keeps very well in the fridge for a week—if it lasts the long—and gets better over time, really. Each day it tastes a little different; each day it’s better!


·       Use arugula or parsley instead of cilantro; substitute some of the House Blend with Meyer Lemon or Persian Lime oil

·       Blend 1 tsp tahini in with 1/4 cup of finished Zhug and cut with a bit of lemon juice and water, if needed

Zhug is a tasty way to incorporate cilantro, a super beneficial anti-inflammatory, anti-microbial, anti-fungal, vitamin K rich, heavy metal cleansing phytonutrient packed herb/spice into your diet, deliciously! More relaxing to make the night before and tastes better the next day, too.
