This offering of Sevillano is all about texture: a rich, creamy, mild olive oil that is excellent for dipping or any cold application--salads, garnishing soup, bean or fish dishes, etc. Typically, Sevillano oil is best when crushed green, producing a bright, peppery oil, reminiscent of Tuscan style oils. Our '09/10 "Sevi" is an exceptional exception to this rule, creamy and mild, with just a touch of burn in the throat at the finish.
Please note that we had a limited amount of sevi this year and it's all gone! We'll try and make more this year, nature willing!
