Olio Nuovo

Olio Nuovo is the first oil of the year, straight from the mill and brimming with fresh flavors and a rich, almost creamy texture. This oil is perfect for dipping, for dressing greens, or as a finishing oil. We do not recommend cooking with Olio Nuovo!

This year’s Olio Nuovo is from our own organically farmed ranch, Silver Ridge, and was pressed on Saturday November 3, 2007.

Fresh oils crushed from green olives are particularly rich in polyphenols and anti-oxidants, powerful anti-inflamatories that are good for you as well as delicious! A recent scientific study published in Science magazine has proven that 50 ml (approx 3 tbsp) of evoo per day is the equivalent of 10% of the recommended dosage of pain relieving ibuprofen. And, as we all know, an ounce of prevention is worth a pound of cure. So, by consuming your daily Stonehouse recommended dose of evoo, you could very well be keeping inflammation and disease at bay, naturally and deliciously!

Olio Nuovo is 100% “raw” oil, which means is it unfiltered and unracked. Racking is a process in oil maintenance that happens 4-8 weeks after crush, when the oil is separated from sediment that has collected at the bottom of the tank. These sediments can give the oil off flavors, if allowed to stay in contact with the oil for too long. Therefore, you must rack your oil 1-3 weeks after purchasing into a clean bottle, if you have any left! Most people have an extra bottle at home, but we also have them for sale in the store for $2.
