MEDITERRANEAN CHICKEN SALAD (6 servings)
- 1 whole chicken, roasted, boned and chopped coarsely
- 1/4 cup Stonehouse Estate Blend Extra Virgin Olive Oil
- 1/4 cup plus 1 Tb raisins
- 1/2 tsp oregano
- 3 Tb. Parsley, minced
- 1/4 cup capers
- 1 red peppers, small dice
- 1/2 large onion, small dice
- 1/2 Tb mustard
- salt to taste
- freshly ground pepper to taste
Procedure
- In a bowl, combine the chicken, parsley, red peppers and onions
- In a separate bowl, whisk together capers, mustard, oregano, raisins and oil.
- Pour oil mixture over chicken mixture, adjust seasonings and mix well.
