MEDITERRANEAN CHICKEN SALAD
(6 servings)

  • 1 whole chicken, roasted, boned and chopped coarsely
  • 1/4 cup Stonehouse Estate Blend Extra Virgin Olive Oil
  • 1/4 cup plus 1 Tb raisins
  • 1/2 tsp oregano
  • 3 Tb. Parsley, minced
  • 1/4 cup capers
  • 1 red peppers, small dice
  • 1/2 large onion, small dice
  • 1/2 Tb mustard
  • salt to taste
  • freshly ground pepper to taste
    Procedure
  1. In a bowl, combine the chicken, parsley, red peppers and onions
  2. In a separate bowl, whisk together capers, mustard, oregano, raisins and oil.
  3. Pour oil mixture over chicken mixture, adjust seasonings and mix well.
