Olio Nuovo & Our Transition to Organic

Olio Nuovo means "new oil" in Italian -- the first pressing of the harvest -- bottled immediately, and available for just a few months. A celebration of a year's work!

This year we will have Coratina, Leccino, Taggiasca, Maurino, Arbosana & Arbequina to choose from, as the trees we planted 3-4 years ago have reached their 1st harvest! We have been planning for this moment for at least 7 years so we are beyond excited at the prospect. As we have been making EVOO for 25 years now, these varietals represent what we think will be the best types for our soils and locations, and we look forward to sharing them with you.

Olio Nuovo is typically a full-bodied, grassy, bold, peppery olive oil, and as it is not racked or filtered before bottling, usually hazy. Use Olio Nuovo for salads, drizzle it on everything, or enjoy the simple pleasure of dipping with fresh bread -- and perhaps a little Maldon Sea Salt.

We're Going Organic!

While most of our oils are not currently certified organic, many are in transition (a 3-year process, during which the groves are farmed organically but cannot yet be labeled organic), and all are grown sustainably with no sprays -- pesticides, herbicides, etc -- ever used on the trees/fruit. This year our Coratina is in its last year of transition, so next year it will become the first of our new plantings to receive an official organic certification! The quality of our products and sustainability is super important to us, and we are excited to be making this official transition.
