Strawberry Ginger White Balsamic Dressing

Strawberry Ginger White Balsamic Dressing

A bright, fruity, simple yet surprisingly sophisticated dressing!

  • Dress your favorite spinach or arugula salad (especially with goat or blue cheese)!
  • Drizzle over a side of roasted sliced beets with a sprinkle of poppy seeds or pine nuts.
  • Top grilled peaches and onions on a bed of greens for a quick summer salad.
  • Drizzle over grilled chicken, pork or steaks.

INGREDIENTS (single serving salad):

  • 2 Tbsp Strawberry Pink Peppercorn Cider Vinegar Shrub
  • 1 tsp White Balsamic Vinegar
  • 1.5 Tbsp mild classic EVOO (Olio Santo is a favorite here)
  • 1/2 tsp freshly grated ginger
  • sea salt & freshly ground pepper to taste (mixed peppercorns are especially delightful here if you have them, otherwise black pepper is fine)

INGREDIENTS (serving for larger salads/dishes):

  • 1/2 cup Strawberry Pink Peppercorn Cider Vinegar Shrub
  • 4 tsp (or 1.5 Tbsp) White Balsamic Vinegar
  • 1/3 cup mild classic EVOO (Olio Santo is a favorite here)
  • 2 tsp freshly grated ginger
  • sea salt & freshly ground pepper to taste (mixed peppercorns are especially delightful here if you have them, otherwise black pepper is fine)

Whisk all ingredients together. Voila!

VARIATIONS:

  • Sub Basil, Persian Lime, Blood Orange or Lemon oil in for the classic oil for a whole new pop on this recipe!
  • No White Balsamic? Sub Apple Cider Vinegar, rice vinegar or champagne vinegar.
