Our Olio Nuovo Piqual is a special harvest of a crop planted 3 years ago in dreamy Capay Valley, which is farmed organically and will be certified in 2022, when the trees are fully up to speed. This is a unique, bright olive oil with notes of green tomato leaf and pine nut, a light, peppery burn on the finish, and no bitterness (which is strange because the olives were completely green at the time of milling).
If you love peak summer tomatoes straight from the garden, this olive oil will delight you! We love this oil drizzled over avocado toast, pizza, polenta, mushrooms, greens and eggs. This is a very 'un-Piqual' like Piqual, but we love it's bright, delicate green notes, slight nuttiness, and luscious texture.
Olio Nuovo is unfiltered and typically not racked before bottling, although we have racked this oil and allowed it to settle for 3 months before bottling, which eliminates much of the sediment. However, please treat it as a Olio Nuovo, and decant it to a new bottle after 1-2 months (if you have any left!) Use it for salads, as a fishing oil in hearty winter fare, or just enjoy the simple pleasure of dipping with fresh bread.
As always, our olive oils are first- and cold-pressed, and grown herbicide and pesticide free.
All of our Olio Nuovo is bottled in dark green glass to better protect it, we just had to show you the color in the photo!
We recommend buying what you can use in the next 2-3 months, and decanting any oil you have left in 1-2 months, leaving the sediment behind. Our bottles clean up nicely in the dishwasher so you can re-use them.
