Olio Nuovo means "new oil" in Italian, the first pressing of the harvest, a celebration of a year's work, bottled immediately and available for just a few months of the year.

This Olio Nuovo is made with 100% of a single varietal of olive called Taggiasca - this is our very first harvest from trees we planted four years ago in Capay Valley, CA! The fruit was perfectly ripe when picked, resulting in a delicate oil with a delicious scent and flavor of ripe olives, fresh cut grass, and buttery artichoke, with a mild, peppery finish. This oil has a fantastic bright green hue, so a perfect oil for finishing, dressing greens, or as a bread dipping appetizer. Delightful!
Olio Nuovo typically has a hazy or cloudy appearance, as it is neither racked nor filtered before bottling, so it is normal to see particulates settle out over time.
It is best used fresh, and generously, right after bottling!
