A delightful limited-edition oil. The first thing you notice is the fruitiness, a tropical, light banana like sweetness, then a bit of grassinesss, and the luscious, creamy mouthfeel - and then it nails the landing, finishing with a nuanced, peppery kick at the back of throat to let you know it's fresh and full of healthy polyphenols.
Larger sizes sold out for the year, sorry! We highly recommend trying even a smaller bottle of this beautiful limited release olive oil!
Harvested: November 26, 2019 (a cold and rainy night!)
The Story: It was raining the night we milled this oil and very cold, at the end of a long day, and week, so we rushed it a bit in the malaxer (which is sort of like a giant mixer that helps the oil separate from the olive fruit and pit after being crushed in the mill) and that gave us lower yields but a superior oil, as the paste wasn't 'worked' as much and the lower the exposure to oxygen possibly resulted in an oil with higher polyphenols. At least, we think that's why it's so good! Part of the mystery of olive oil is you never really know why one batch turns out so much better than another.
We recommend using this oil in cold applications only, to showcase its unique flavor: on greens, finishing vegetables, couscous, rice,soups, hummus, or just for dipping with fresh bread! Try it drizzled on a toasted english muffin in the morning instead of butter, the warmth from the muffin makes the flavors pop. This is a great oil to gift to the foodie or olive oil aficionado in your life.
