Harissa Coconut Chicken

Grill season with family and friends is even more fun with tasty, no-fuss recipes! This is a great example of how having a handful of great spice blends on hand makes whipping up delicious meals SO EASY.

INGREDIENTS:
  • 1/2 cup full fat coconut milk (save the rest for other delicious uses or make a larger batch to have leftovers/serve more people!)
  • 2 Tbsp Harissa spice blend
  • 1/2 tsp salt
  • 1 tsp honey (optional)
  • ~1lb chicken thighs
Mix the first 4 ingredients together in a small bowl and add the chicken. Marinade for a few hours (overnight for tons of flavor!) then grill until cooked through. Serves 2-3. Voila!

VARIATIONS & SERVING IDEAS:
  • Asparagus and sweet potatoes are delicious with it, but this chicken is great too as kabobs with couscous/coconut rice (try mixing in some Persian Lime or Blood Orange oil!) or on naan with a big spoonful of hummus and/or greek yogurt.
  • Mix some plain yogurt with a little more Harissa and drizzle of olive oil as a dipping sauce!
To make it spicy, finish the chicken with a drizzle of Habanero oil!
