Our Organic Coratina Extra Virgin Olive Oil is a dream for the robust oil lover, fitting the classic profile: grassy, bold & bitter, but with a rich, luscious texture that helps to balance its pungency—a little!
Its robust taste is due to high levels of polyphenols—Coratina has, on average, more than 300% more polyphenols than many other varietals of olives—which are not only powerful antioxidants that prevent cellular aging, but also give olive oil exceptional oxidation stability, helping it stay fresh longer.
Although we mainly use Coratina as a blending oil in our House Blend, and just a touch in our Olio Santo, we know some folks crave a super kicky oil, and so we have bottled some of this single varietal for our die-hard strong olive oil fans, and for folks who prefer a 100% Certified Organic olive oil.
The Coratina olive varietal originally hails from Italy, and is primarily grown in Puglia, the heel of the Italian boot. We grow ours in Capay Valley, CA, about 1.5 hours north of San Francisco. Enjoy in good health!

Use it for cold applications and finishing, when you really want to taste the bright piquancy of EVOO, such as for dipping bread, dressing salads, and drizzling over grilled or steamed veggies, avocado toast, soups, and creamy cheeses like burrata and ricotta.
