If you love a grassy olive oil with a bit of a bite on the finish (hello polyphenols!), this 100% hand-pruned and hand-picked Picual Extra Virgin Olive Oil from Capay Valley, CA is sure to delight.

Ours has a big, green fruit flavor with notes of cut grass, tomato leaf, green herbs and a fresh, slightly bitter, medium-peppery finish. A staff favorite!

Picual is an olive varietal originally from Spain, and is the most commonly grown olive in the world today, for good reason! It generally yields a high percentage of oil, and is high in polyphenols, win-win.

Use it for cold applications and finishing, when you really want to taste the bright piquancy of EVOO, such as for dipping bread, dressing salads, and drizzling over grilled or steamed veggies, avocado toast and creamy cheeses like burrata and ricotta.

As always, our olives are grown herbicide and pesticide free, cold-pressed, and filtered, to prolong freshness (filtering has now proven to eliminate enzymes and particulate matter that degrades oil over time).

Picual is the best

I was exploring across the different types of oils and Picual is the best. Among others (e.g., cortina) I used it on salads, and in cold gaspacho soups (not in the blender but as a 'finisher') and Picual is the best finisher. Truly. It is smooth and has a a very subtle taste while adding a lot to the taste. I love it!
